Korean Easy Meal Recipe: Chamchi-kimchi-jjigae (Korean Kimchi Stew with Tuna)

Chamchi-kimchi-jjigae 참치김치찌개 is a Korean Kimchi stew with tuna.

This is the most popular Kimchi dish Koreans eat. You can make it with a range of ingredients such as pork, scallions, onions, tofu and tuna. This cook book will show how to make Kimchi Stew with tuna. 

Kimchi’s flavour as an ingredient becomes stronger and more complex as it ages. As a result, kimchi-jjigae is often cooked using older, more fermented, and “riper” kimchi, which has a much more pronounced flavor and contains higher amounts of probiotics.

Sliced kimchi is put into a pot with the meat of choice and other typical ingredients, such as tofu, sliced spring onions, and garlic. They are stewed in water or anchovy (myeolchi) stock. The stew is seasoned with fermented bean paste (doenjang) or fermented red pepper paste (gochujang).The stew is hot, spicy and a little sour. Kimchi stew goes best with white rice. 

Ingredients

  • 1  can of tuna
  • Fermented kimchi, cut into slices
  • ¼ cup kimchi brine
  • 1 cup of onions sliced
  • 1 green onion, cut diagonally into pieces
  • 1 teaspoon salt
  • 2 teaspoons Korean hot pepper flakes
  • 2 teaspoons sugar
  • 2 teaspoons sesame oil
  • Bite size slices of tofu (about 1 cup)

How to Cook

  1. Place the kimchi in a shallow, heavy pot or pan. Add kimchi brine, onion, green onion, salt, hot pepper flakes, sugar, and sesame oil. 
  2. Add 2½ cups water and cover. Cook for 25 minutes over medium high heat. If it boils over, crack the lid a little and if the water boils out, add more so that the kimchi and all the ingredients are always submerged. 
  3. Stir the stew with a wooden spoon and add tuna and tofu. Continue to cook for another 5 minutes until the tofu turns soft.
  4. Sprinkle with the chopped green onion and serve right away with rice and more side dishes if you desire.
