This process results in a firm flesh that provides an excellent, chewy-crunchy texture once rehydrated. Known as ‘mu-mallang-i’, this ingredient is essential for creating one of Korea’s most beloved side dishes, concentrating the radish’s natural sweetness and providing a satisfying bite.

How to Prepare

Soak the dried radish strips in water, wash them, and then firmly squeeze out all excess water.

Prepare the seasoning sauce with soy sauce (or fish sauce), chilli powder, garlic, chives, corn syrup, and sesame seeds.

Add the rehydrated radish strips to the sauce and mix thoroughly by hand to ensure the seasoning is well absorbed.

Tips

For a more traditional recipe, add rehydrated dried chilli leaves. If unavailable, chives are a good substitute.

If you plan to eat the dish immediately, add a dash of sesame oil for extra flavour.

If you find the dish too spicy at first, let it sit for 2-3 days for the heat to mellow.
