This ‘hobak-goji’ is created by harvesting pumpkins produced in Korean regions like Yeongwol, Sillim, and Jecheon, which are then carefully sliced and dried. The drying process concentrates the pumpkin’s natural sweetness and creates a wonderfully chewy and flavourful texture when rehydrated. It is an essential ingredient for making classic side dishes (‘namul’) and adds a delightful texture and sweetness to various recipes.
How to Prepare
Soak the dried pumpkin in warm water or lightly boil it until soft, then clean and firmly squeeze out all excess water.
First, season the rehydrated pumpkin with salt or soy sauce and garlic.
Heat perilla oil in a frying pan, add the seasoned pumpkin, and stir-fry, finishing with shredded chilli, spring onion, sesame salt, and sesame oil.
Tips
Beyond a simple side dish, these dried pumpkin strips are also an excellent ingredient for doenjang-jjigae (soybean paste stew).
They can also be rehydrated and used to make hobak-jeon (pumpkin pancakes).
